Coffee Rubbed Smoked Chicken

  • 2 whole chickens with their giblets removed
  • ¼ cup salt
  • 1/3 cup brown sugar
  • 1 tbs Garlic Powder
  • ½ tbs onion powder
  • ¼ cup coffee beans, coarsely ground
  • ½ tbs Cumin
  • 1 tbs Black Pepper
  • ½ tbs Onion Powder


Step 1: First of all, fill the smoker with wood chips.

Step 2: Leave the water pan dry (this can help you to get the chicken skin crispy). Start preheating the smoker to 300 degrees Fahrenheit.

Step 3: Take the chicken out of the packaging and remove giblets if that hasn’t been done already. Use a paper towel to pat the skin dry.

Step 4: Place uncovered in the refrigerator while the smoker heats up and you prepare the rub.

Step 5: Take all of the rub ingredients and mix them in a bowl until well combined and there are no clumps of spices.

Step 6: Coat the chicken all over with the rub.

Step 7: Now, place the chicken in the smoker and cook for at least 2 to 3 hours, until the temperature registers 165 degrees Fahrenheit at the thickest part of the chicken’s leg.

Step 8: Remove from the smoker and let it rest for 10 minutes before cutting Serve it with Alabama White Sauce.
