If you want to smoke a trout and you’re looking for the easiest way to make the smoked rainbow trout using all the handy ingredients then this recipe will prove to be helpful to you.

Smoked Rainbow Trout


  • 8 cups water
  • 2 rainbow trout fillets boned
  • 1/3 cup coarse kosher salt
  • 2 tbs soy sauce
  • 2 tbs sriracha sauce
  • 1 tsp thyme
  • 1 tsp paprika
  • ½ cup white sugar
  • 4 garlic cloves, minced
  • 1 tbs fresh ground black pepper


Step 1: First of all, mix water with all the sugar, salt, and spices until the sugar and salt are dissolved.

Step 2: In a dish, skin side down the fish and pour in the brine. Cover the dish with plastic wrap and flip the fish continuously. Place the fish in the fridge and let the fish marinate for at least 8-10 hours.

Step 3: Rinse the fish completely and lay it on the smoker rack. Now, place the trout in a cool dry place for at least 1 hour so that a pellicle starts to form on the outside of the fish. Turn on the fan if you want to speed up the process.

Step 4: Set the smoker to 180 degrees Fahrenheit using the Alder, wood maple, or any other mild wood chip.

Step 5: Smoke the fish for 3-4 hours or until you notice that the internal temperature of the fish has reached 145 degrees Fahrenheit.
